|Crispy Zucchini Fritters with Ricotta Cheese Dipping|
Everyday, we are trying new recipes and we are loving it! <3
Zucchinis (Medium Size) x 3
Feta Cheese x 4 oz
Minced Fresh Garlic x 1 large clove
Scallions x 3
Fresh Parsley x 1/4 cup
Whole Eggs x 2
Spelt Flour x 1/2 cup
Bread Crumbs x 2 tbsp
Grate the Zucchinis into thin slices. Squeeze the water out of the zucchinis with a clean dish cloth/ paper towels - this is the most important part!
Crumble the feta cheese, chop up the Scallions and Parsley and beat the 2 eggs. Add all the ingredients into a large mixing bowl. Stir until well combined. For each fritter, scoop out 2 tbsp of the mix and roll it into a ball with your hands. Press it to a cookie-shape.
Spray coconut oil/ olive oil onto a pan. Heat it up and pan-fry the fritters with medium low heat for 3-4 minutes on each side.
Ta-dah! The Yummy Zucchini Fritters are ready to be served! You can eat them with a dipping of your choice <3
