Homemade Zucchini Fritters Recipe
Crispy Zucchini Fritters with Ricotta Cheese Dipping
So I came home from a long day of work and guess what my amazing mum, Kitty, made us for dinner? SOME CRISPY ZUCCHINI FRITTERS!!!I am constantly amazed by how quickly my mum has adapted to my clean-eating habit - even she has started to eat clean! Coming from a Chinese family, I feel extra lucky to have such an open-minded mum who not only try to accept and support what I am doing with my fitness journey, but also try to be a part of it!
Everyday, we are trying new recipes and we are loving it! <3

Grate the Zucchinis into thin slices. Squeeze the water out of the zucchinis with a clean dish cloth/ paper towels - this is the most important part!
Crumble the feta cheese, chop up the Scallions and Parsley and beat the 2 eggs. Add all the ingredients into a large mixing bowl. Stir until well combined. For each fritter, scoop out 2 tbsp of the mix and roll it into a ball with your hands. Press it to a cookie-shape.

Spray coconut oil/ olive oil onto a pan. Heat it up and pan-fry the fritters with medium low heat for 3-4 minutes on each side.
