Fluffy Rosemary Parmesan Cheese Muffins

Fluffy Parmesan Cheese Muffins Recipe

If you are a cheese-lover like I am, I promise you would fall in love with these Parmesan Cheese Muffins that are lightly crisp on the outside and fluffy on the inside! They are SO YUM especially when they are fresh out of the oven. How lucky I am to wake up on a Sunday morning to these goodies - my mum is the best chef in the WORLD.
Fluffy Parmesan Cheese Muffins Recipe

Whole Eggs x 2
Homemade Almond Milk x 3/4 cup (Recipe at my earlier post:
Olive oil x 1/2 cup
Grated Parmesan Cheese x 3/4 cup + 2 tbsp
All Purpose Flour x 1.5 cup
Brown Sugar x 1.5 tbsp
Baking Powder x 2 tsp
Baking Soda x 1/4 tsp
Chopped Fresh Garlic x 1 tsp
Chopped Fresh Rosemary x 1 tsp
Pink Salt x 3/4 tsp
Black Pepper x 1/2 tsp
Servings: 12
Fluffy Parmesan Cheese Muffins Recipe
Preheat oven to 350F. In a mixing bowl, whisk eggs, milk and oil until combined. Then in another bowl, mix 3/4 cup of cheese, flour, sugar, baking powder, baking soda, garlic, rosemary, salt and black pepper together. Pour the wet mix into the dry mix and stir until well combined.

Grease muffin cups with olive oil. Scoop the batter out into the muffin cups (half full). Bake for 15 minutes and then take the muffin cups out and sprinkle the remaining 2 tbsp of cheese on top of the muffins and bake for 5 more minutes.TA DAH and the crispy and fluffy Parmesan Cheese Muffins are ready!

    1. They are a healthier alternative to traditional cheese muffins that you can from supermarkets/ cafes. These are my healthier options of cheat treats (: but if you would like them to be even healthier you can always sub all purpose flour with spelt x
