Thanksgiving Fresh Cranberry Pie

Thanksgiving Healthy Fresh Cranberry Pie Recipe
I hope you all had a great Thanksgiving day! With all the celebration meals going on with family and friends, it is quite easy to gain back those extra pounds by pigging out and eating all the not-so-healthy but super yummy food. Well, there's nothing wrong with giving ourselves a break to cheat a bit on this joyous occasion! But at the same time, we can always go for healthier options that are just as delicious! 
For us, my mum baked this Fresh Cranberry Pie and it was YUM!! Even better to eat it with Greek Yogurt and Pure Honey, or even homemade nice cream if you wish!;p
Thanksgiving Healthy Fresh Cranberry Pie Recipe
Fresh Cranberries x 2 cups
Spelt Flour/ All-pupose Flour x 1 cup
Coconut Oil (Melted) x 2/3 cup
Whole Eggs x 2
Walnuts (Chopped) x 1/2 cup
Brown Sugar x 1/2 cup + 1/2 tbsp
Thanksgiving Healthy Fresh Cranberry Pie Recipe
Preheat oven to 160C. Whisk the eggs in a large mixing bowl together with 1/2 cup of brown sugar until combined. Add flour and coconut oil into the egg mix and stir well. Grease a 12-inch baking plate with coconut oil/ olive oil. Place the cranberries into the plate and sprinkle 1/2 tbsp of brown sugar onto the cranberries, adding the walnuts on top. Then pour the wet mix into the baking plate on top of the cranberries. Bake for 45 minutes and TA-DAH, the Fresh Cranberry Pie is now ready to be served! Serve it with Homemade Ice cream/ Greek Yogurt/ Pure Honey according to your taste (:

  1. Hi Emi! I would like to know is it possible use dried cranberry instead fresh cranberry, once i'm from Brazil and here is impossible to find fresh ones!!
