Baked Oatmeal Cranberry Pie

IT'S CHRISTMAS!!!! Merry Christmas everyone! Tis' the season to be baking (but actually, for us, every season is the season to be baking ;p). Hope you are not struggling too much with all the yummy but not so healthy food at Christmas gatherings ;p Here at our house - we are going to stay cooking and eating clean throughout this Christmas! One of my favorite is this Christmas Baked Treat made by Mum - Healthy and DELISHHH Baked Oatmeal Cranberry Pie to replace unhealthy and fatty dessert. NOM NOM NOM who says you can't eat clean but enjoy good food at the same time!
Top and Bottom Oatmeal Layers
Rolled Oats x 4 cups

All-purpose Flour x 2 cups
Melted Margarine/ Butter x 1/2 cup
Vanilla Extract x 2 tsp
Whole Eggs x 2
Brown Sugar x 1/2 cup
Pink Salt x 1 tsp
Chopped Pecans x 1 cup
Baking Soda x 1 tsp

Cranberry Fillings
Lemon Zest x 1 tbsp
Water x 1/2 cup
Dried Cranberries x 2 cups
Ground Cinnamon x 1/2 tsp
Preheat oven to 350F. In a large mixing bowl, stir Rolled Oats, Flour, Sugar, Chopped Pecans, Baking Soda and Salt together. Then stir in Melted Margarine/ Butter and Vanilla Extract into the dry mix and stir until well combined. This is your Oatmeal mix.
Bring water, dried cranberries, lemon zest and cinnamon to boil in a pan at medium heat - stir while boiling. Once the mix is boiling, reduce heat to a simmer and continue to cook for another 2 minutes. Turn off the heat and let the mix cool down. Pour the mix into a blender/ food processor, blend on high until smooth and creamy. This is your Cranberry Fillings.
Grease a baking dish with coconut/ olive oil. Scoop out half of the Oatmeal Mix to the baking dish and use your hands/ the back of a spoon to press down the mix to make the surface of the bottom Oatmeal layer even. Scoop out the Cranberry Fillings mix and spread it over the bottom oatmeal layer. Scoop out the rest of the Oatmeal mix and place it on top of the Cranberry Fillings mix, pressing down with your hand/ spoon to make the layer even.
Bake for 40 minutes until the top and edges turn golden brown. TA-DAHH YOUR YUMMY OATMEAL CRANBERRY TART IS NOW READY!!!
