Banana Oatmeal Crumb Cake

One of the yummiest homemade breakfast sweet treats! It is so filling and is great for a pre/post- morning work out. I love to eat it together with homemade icecream/ greek yogurt unsweetened with pure honey! #FUEL
Margarine (Melted) x 1/2 cup
Brown Sugar x 1/2 cup
Whole Eggs x 4Mashed Bananas x 2 cups

Vanilla Extract x 2 tsp
All-purpose Flour x 1.5 cups
Rolled Oats x 2 2/3 cups
Pink Salt x 1/2 tsp
Baking Soda x 2 tsp
Top Layer Crumb (Optional)
Rolled Oats x 1.5 cups
Brown Sugar x 1/2 cup
Margarine (Melted) x 2 tbsp
Chopped Walnuts x 2 tbsp
Ground Cinnamon x 1/2 tsp

Preheat oven at 175C. In a mixing bowl, stir flour, oats, salt and baking soda together for a dry mix. In another mixing bowl, mix margarine and sugar together and then whisk in eggs, mashed bananas and vanilla extract. Pour the dry mix into the wet mix and stir together until well combined. Grease a baking pan with coconut oil and pour the batter into the pan.

For the top layer crumb, stir together oats, brown sugar, margarine (melted), walnuts and cinnamon in a mixing bowl until it turns crumbly and then sprinkle the mix on top of the batter in the baking pan. 
Bake for 50 - 60 minutes and TA-DAH your Banana Oatmeal Crumb Cake is now ready!!!
