It is time for some Pancakes again! Have not made pancakes for a while already since my Chocolate Buckwheat Banana Pancakes (http://stayfitandtravel.blogspot.hk/2014/11/guilt-free-chocolate-pancake-tower.html) and this morning I was craving for some yumsss so I made these Protein-packed Cottage Cheese Pancakes! Very high in protein, cottage cheese is one of the healthiest superfood in the world and an amazing source of protein for those who are vegetarians. These pancakes were perfect as my pre-workout breakfast in order to power me up through my full body workout today!
Banana x 1
Low Fat Cottage Cheese x 1/2 cup
Whole Egg x 1
Rolled Oats x 1 cup
Baking Powder x 2 tsp
Ground Cinnamon x 1 tsp
Homemade Almond Milk (Recipe can be found at earlier post: http://stayfitandtravel.blogspot.hk/2014/11/homemade-almond-milk.html) x 3 tbsp
DirectionsAdd banana, cottage cheese, egg, rolled oats, baking powder, cinnamon and almond milk all into the blender/ food processor. Blend on high until the mix is smooth and well combined. Grease a pan with olive oil/ coconut oil. For each pancake, scoop out 2-3 tbsp of the mix and cook it with low heat. Once you see bubbles on one side, flip the pancake and cook the other side until both sides turn golden brown. You can then serve the pancakes with more cottage cheese/ seeds (i.e. sunflower seeds and chia seeds for me)/ dried raspberries/ oats. And my favorite would be to eat them with Low Fat Greek Yogurt Unsweetened and Pure Honey. NOMMM! Typing this makes me hungry now haha
