After making the yummy and crispy Zucchini Fritters (Recipe at earlier post: http://stayfitandtravel.blogspot.hk/2014/11/crispy-zucchini-fritters-with-ricotta.html) and also Broccoli Feta Cheese Fritters (Recipe also at earlier post: ...) a while ago, we have been having a hard time getting over those yummy goodies so we decided to make some fritters for dinner again - and this time we are using Spinach instead, as well as Almond Meal (from making Almond Milk) so these fritters are just super healthy! They are very filling as well and hence make themselves a great option if you are feeling very hungry and do not want to just eat salad for dinner for the night!
IngredientsBaby Spinach x 1 cup
Homemade Almond Meal x 1 cup (Recipe from earlier blog post: http://www.stayfitandtravel.blogspot.hk/2014/11/homemade-almond-milk.html)
Chopped Cilantro x 2-3 pcs
Chili Flakes 1-2 tbsp
Chopped Green Bell Peppers x 1/2 cup
Chopped Onions x 1/2 cup
Whole Egg x 1
Spelt Flour x 1/2 cup
Salt and Pepper to taste
Optional: Low Fat Greek Yogurt Unsweetened as dipping
DirectionsWash baby spinach and dry it with paper towel and squeeze the water out (as much as you can) - like all the fritters before, this is the most important part! Chop up the Spinach, Cilantro, Peppers and Onions. Then beat the eggs in a mixing bowl and stir in all the ingredients until combined. Add salt, pepper and chili flakes according to your taste. For each fritter, scoop out 2 tbsp of the mix and flatten it with the spoon. Spray coconut oil/ olive oil onto a pan. Heat it up and pan-fry the fritters with medium low heat for 3-5 minutes on each side until they turn golden brown. TA-DAH, these super healthy Spinach and Almond Fritters are now ready! You can serve them with Greek Yogurt as dipping.
